**fiesta**

We're headed to a Cinco de Mayo party on Saturday - an annual get-together our neighbors put together and also the first big neighborhood party we went to after moving here last year.  They are famous for their dangerously delicious margaritas and always have an awesome spread of tasty fiesta snacks.  Still trying to decide what I want to take...

maybe something classic like guacamole and pico de gallo
-or- kick it up with spicy stuffed jalapenos or the addictive jalapeno popper dip
also kind of antsy to try something new, and Bobby Flay's Queso Fundido is calling my name.





















On a separate fiesta front, I've been on a ridiculous breakfast burrito kick lately.  Like for breakfast, lunch or dinner. Or all of the above. Weird.  So what I really like about breakfast burritos is that you can mix it up and try something different every time...or stick with a classic combination. 

For me, I keep it pretty simple.  My must have "layers" include:

*warm soft, flour tortilla (heat in the microwave while wrapped in a damp paper towel - you won't get the dried out edges)
*thin layer of refried or black beans (I know, some people hate the idea of beans with breakfast but I LOVE it)
*sprinkling of shredded Mexican cheese (Trader Joes makes a great light blend)
*crispy salty hashbrowns (what is not to love)
*one scrambled egg
*dollop (oh daisy) of sour cream
*finally, a few shakes of hot sauce (I love Valentina, but Tapatio and Cholula are also delish)

And there you have it...a little bundle of heaven right on your plate.  EnJOY!

You have the best ideas. I have brought your stuffed poppers to 2 parties now and they were the most liked appetizer. Sooooo yummy!

Yum to all of the above. That guacamole dip sounds super good! And I am also on a breakfast for dinner kick. Mine is just salsa, scrambled eggs and a corn tortilla. Good!

Hahaha, I'm laughing that we were just talking about your obsession with breakfast burritos a couple of days ago :) I'm surprised you put sour cream on it...you don't even like sour cream. I would love to have you come over and make one for me please! It looks SO delicious!!!

Lynds - glad to hear I am not the only one nuts for brinner. ;) I am going to mix it up and pick up some corn tortillas next time. REN - you know how excited I get when you comment!! And of course I just barely dabbled the sour cream. YEAH RIGHT. Best condiment ever.
