Roasted Chicken + Caesar Naan

Hold the phoooooone. It's a recipe. On what started as a food blog. And while I love sharing pictures of Miss Delaney, I'm not sure her sweet mug helps much with meal planning.  So here is a super quick, easy recipe that I just love.

This came together during a typical 6pm mad rush of digging through the fridge / pantry / freezer crossing my fingers that something will inspire a somewhat healthy, satisfying dinner.  You don't need much - a little rotisserie chicken, lettuce, Caesar dressing, some sort of flatbread (oh, and a little parmesan, garlic, olive oil + kosher salt won't hurt).  I had whole wheat naan on hand which worked great, however any flatbread or pita would work.  I love that it soaks up so much of the great Caesar flavor, and topping with roasted garlic makes it feel like you're eating something a bit more exciting than the norm on a Tuesday night.


INGREDIENTS (serves 2 entree-sized portions)
For the naan:
Whole wheat garlic naan (2)
6 cloves roasted garlic
1/2 t kosher salt
1 T olive oil

For the Salad:
4 C chopped romaine
1/2 C your favorite Caesar dressing (you can find mine here
1 C chopped rotisserie chicken
1/4 C shaved parmesan
Fresh cracked pepper

INSTRUCTIONS
To prepare the roasted garlic, follow these simple instructions, courtesy of the beautiful Simply Recipes blog.  Once roasted, smash 6 cloves in a small bowl with 1 T olive oil and 1/2 t kosher salt.  Brush the roasted garlic + oil on each naan and then place in a 400 degree oven for 5-8 minutes (until slightly crisp). 

While the naan is baking, toss the chopped romaine, chicken and Caesar dressing together.  Once the naan is crisp, removed from the oven and has slightly cooled, top with the chicken Caesar salad.  Garnish with cracked pepper and parmesan shavings.  Serve immediately.

This would go great with Stonefire Flatbread's Whole Wheat Naan. Love the recipe, simple but effective:)

LOVED this recipe! I have some trader Joes garlic naan in my freezer and it would probably have gone to waste without this recipe. It was delish thanks Jackie!
