What's not to love?


Prepare for a sugar rush my friends.  These super-decadent cookies are the result of a last minute effort to kick up some plain peanut butter cookies before a cookie exchange last week.  And after all, peanut butter loves chocolate and chocolate loves peanut butter.  A little match made in cookie sandwich heaven.

I have to credit the beautifully creative blog, My Kitchen Addiction for the inspiration.  I swapped out the cookie to create a peanut butter s'more sandwich, but love Jen's chewy graham cookies for a classic version.

To prepare, you'll need the following
(makes 2 dozen)
48 peanut butter cookies, baked and cooled
12 ounces dark chocolate or milk chocolate melts (can be purchased at most grocery stores)
Homemade marshmallow fluff (surprisingly easy and fun to make - recipe below)
* 2 egg whites
* 1/2 cup granulated sugar
* 1/4 cup light corn syrup
* 2 tablespoons water
* 1 1/2 teaspoons pure vanilla extract
* Pinch of sea salt

Create a double boiler on your stovetop by adding about 2 inches of water in the bottom of a large saucepan. Bring to a simmer. Combine all of the ingredients in a metal mixing bowl (one that fits in the top of the saucepan without the bottom touching the water). Place the mixing bowl over the simmering water, and beat with an electric hand mixer. The mixture will gradually become fluffy and then will thicken and turn white and slightly glossy (after about 8 minutes). Remove the mixing bowl from the simmering water. Continue to beat on high for an additional minute or two. The marshmallow will thicken just a bit more. Allow the marshmallow to cool.  I transfered the fluff to a large ziploc bag, squeezed out all the air and then cut the tip off one bottom side of the bag to create an easy piping tool. 

To assemble, match up the cookies in pairs of similar size/shape and lay them face down on a sheet pan lined with parchment or waxed paper. Pipe the marshmallow onto half of the cookies. Top the marshmallow fluff with the matching cookie. Heat the chocolate melts as directed, and dip half the fluff sandwich in the chocolate.  Be sure to place on parchment / wax paper and allow plenty of time to cool so the chocolate can harden.
